WAECO cooking segment: Shauno makes beef vindaloo


Beef “on-the-lu” Vindaloo with flat bread


  • 750g diced beef
  • 1 x jar vindaloo curry paste
  • 2 x can of crushed tomatoes
  • 2 x chopped onions
  • 1 x tbsp crushed garlic
  • Rice to serve
  • 1 x can of mango slices


Fry onions and beef with garlic to brown in a camp oven. Add curry paste and crushed tomatoes and back heat off to allow curry to simmer for at least 20 minutes. Keep an eye on your curry so it doesn’t reduce too much and become dry. Serve with mango slices and rice.

Garlic flat bread


  • 3 x cups of flour
  • 1 x yeast satchel
  • 1 x cup of water
  • 1 x tbsp sugar
  • Pinch of salt
  • Garlic to taste


Put water, sugar and salt in a mixing bowl.  Let the yeast sit in the water with salt and sugar for at least 10 minutes. Add flour and mix the ingredients together.  Knead into a dough, adding flour or water if you need to, to get the consistency right. Divide the dough into small handfuls and roll into flat bread.  Spread garlic over flat bread to taste.  To cook, put it straight on a hot BBQ plate and turn after a few minutes.
